If you are entertaining a group of people, your family, or just want to make a holiday treat that is both cheap and delicious for yourself, then take a look at these simple recipes.
Chocolate Peanut Butter Balls
The ingredients you will need to make these delicious little morsels are; 1 cups peanut butter, cup butter, 1 lb powdered sugar, 1 tsp vanilla extract, 1 cups semi-sweet chocolate chips, and 1 tbsp vegetable shortening.
In a medium bowl combine the peanut butter with the butter. Stir in the vanilla and the powdered sugar until it is completely incorporated.
Roll the mixture into balls that are approximately 1" in diameter. Any larger and they may be difficult to bite. Place the balls on a platter lined with wax paper and set them in the freezer to cool and harden.
If you have a double-boiler, use it to melt the chocolate, if not, use a saucepan on low heat and stir to avoid burning. Add the vegetable shortening to the chocolate. The vegetable shortening will help the chocolate become firmer when it cools down.
After they have cooled in the freezer, place a toothpick into each one and then cover them by dipping each one in melted chocolate. Some opt to leave the top uncovered so that they resemble buckeyes from the buckeye tree.
Put the buckeye treats in the freezer until you are ready to serve them.
Christmas Spice Nuts
It doesn't take much to create this delicious Christmas treat. They make for a nice protein filled snack that many will love.
The first step is to preheat your oven to 300 degrees Fahrenheit and grease a baking sheet.
Spiced nuts are easy to make because most of the ingredients are found in many kitchens. You'll need 1 egg white, cup of brown sugar, 2 tbsp of ground cinnamon, one teaspoon of ground cloves, one teaspoon of ground ginger, one tablespoon of vanilla extract, and one pound of mixed nuts.
Separate the egg white from the yolk and then beat the white until it is foamy and white instead of clear and gelatinous.
Mix the spices and sugar together, then incorporate the vanilla and the egg white. Next, toss the nuts in the mixture until they are completely coated.
Spread the nuts onto your greased baking sheet and place in the oven.
Bake for 25-30 minutes, tossing occasionally, until they are golden brown and toasted. Remove from the oven and allow 20 minutes for them to cool on the pan. Store in an air-tight container in the refrigerator for up to 1 week.
